"I started working for Whitbread about 18 years ago in Central London and worked in a number pubs over a few months before we went out on our own.

"I’ve run country pubs, inner-city pubs... basically about eight or nine pubs in the last 15 years."

When looking for the right pub I think you also have to look at different times of the day and different times of the week

On finding the right pub...

"When looking for the right pub I think you also have to look at different times of the day and different times of the week. A lot of people go into a pub once or twice and then decide whether to buy or not - which is crazy!

"For example, I visited this pub about eight times with various friends, we came up in the day and stayed overnight. So I had a very good idea what the business was like before I made a move."

On common misconceptions about running a pub...

"One misconception is people thinking that as you’re self-employed you can take time off whenever you like.

“Another is that it’s a very hard job, and that’s what a lot of people think – but it doesn’t have to be. It’s all about how you arrange things.”
